Crush cracker crumbs in mortar and pestle. Mix crumbs in a medium mixing bowl with salt and pepper. In separate bowl, whisk eggs and milk together. Coat chicken first in cracker crumb mixture and then in milk mixture. Dip once more in cracker mixture. Place chicken breasts in greased casserole dish ad drizzle with melted butter. Bake at 375° about 1 hour or until done. Do not turn. Makes 4 servings. |
