Baked Alaska


sponge or layer cake
1 quart ice cream
4 egg whites
2/3 cup sugar
sugar to sprinkle

Trim a 1-inch layer of sponge or layer cake 1 inch larger on all sides than a 1-quart brick of ice cream (or 2 pints side by side). Place on a wooden cutting board. (Keep ice cream frozen till ready to use.)

To make meringue: Beat 4 egg whites till soft peaks from. Gradually add 2/3 cup sugar, beating till stiff peaks form.

Center brick of ice cream on cake layer. Spread meringue over ice cream and cake, sealing to edges of cake all around. Sprinkle lightly with sugar. *Bake at 500° till meringue is golden; about 3 minutes. Serve immediately. Makes 8 servings.

*If desired, assemble Alaska and freeze. Brown just before serving.
