Cobbler


1 cup flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter
1/4 cup milk
1 slightly beaten egg

Peach filling:
1 1/2 tablespoons cornstarch
1/4 teaspoon ground cloves
1/2 cup brown sugar
4 cups sliced peaches
1 tablespoon lemon juice
1 tablespoon butter

Apple filling:
1 cup sugar
2 tablespoons flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
6 cups sliced pared apples

For biscuit topper, sift together flour, sugar, baking powder, and salt. Cut in butter till mixture resembles coarse crumbs. Combine milk and egg; add all at once to dry ingredients, stirring just to moisten. Set aside.

Prepare fruit filling. Pour into 8-inch round baking dish. Immediately spoon on biscuit topper in 6 mounds. Bake at 400° for 20 to 25 minutes. Serve warm with cream or ice cream. Makes 6 servings.

Peach: Add cornstarch, ground cloves, and brown sugar to 1/2 cup water in saucepan. Cook and stir till thickened. Add peaches, lemon juice, and butter. Cook till peaches are hot, about 5 minutes.

Apple: Combine sugar, flour, ground cinnamon, and ground cloves. Toss with apples. Cook and stir over medium heat till almost tender, about 7 minutes.
