Smoked Salmon and Cream Cheese Frittata


8 eggs
1/2 cup milk
1/4 cup chopped fresh chives
1/4 cup chopped fresh basil
1/4 teaspoon pepper
1/8 teaspoon salt
2 teaspoons olive oil
2 ounces cream cheese, diced
3 ounces thinly sliced smoked salmon
1/2 red or yellow onion, thinly sliced, for garnish (may sautée)
juice of 1/2 lemon

Whisk together eggs, milk, chives, basil, pepper, salt, and lemon juice.

Heat oil in skillet. Pour in egg mixture; scatter cream cheese over top; cook. Lift up edges with spatula to let egg flow underneath. Cook till set on bottom. Sprinkle salmon over top, press light and shake skillet to settle salmon. Broil till set and sightly puffed and golden (1-1 1/2 minutes). Cool five minutes. Loosen edge with spatula and slide onto plate. Cut into wedges. Garnish with onion and fresh basil and chives if desired.
