Chile Lime Vinaigrette



Roasted acorn squash with chile lime vinaigrette


1 jalapeño, seeded, deveined, and minced
juice and zest of 2 limes
1/4 cup cilantro, finely chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
extra virgin olive oil

Mix all ingredients except oil in small mixing bowl. Gradually whisk in oil till emulsion forms. Chill if desired.
