1 pound white fish fillets
2 cups baby spinach
1 red, yellow, or orange bell pepper, thinly sliced
1/2 cup onion, thinly sliced
1 tablespoon honey
1/2 cup balsamic vinegar
3 tablespoons oil
Wash baby spinach and place on large serving platter.
Heat two tablespoons of oil in a skillet. Add onion and cook over medium heat till just soft. Add bell pepper and cook till just soft. Add to the baby spinach and stir.
Heat remaining oil in skillet and cook fish fillets several minutes a side or till done (when they flake easily with a fork). Place atop onion/pepper/spinach mixture.
Mix honey and balsamic vinegar together in pan; heat through and stir. Drizzle over fish. Serves 4.
