Tabbouleh



Tabbouleh


1 cup cracked wheat or bulgar
1 cup chopped parsley
1 cup chopped tomatoes
3/4 cup chopped cucumber
1/2 cup olive oil
1/4 cup wine vinegar
salt and pepper to taste

Soak bulgar in cold water one hour or till just soft. Drain. Mix chopped parsley, tomatoes, and cucumber with bulgar. Drizzle oil, vinegar, salt, and pepper over top. Let stand for a few minutes before serving.
